Shredded Chicken:

Frank's RedHot Sauce

Preparation
Place the chicken thighs in a large oven proof tray. Add the chicken stock, garlic, onion, salt, pepper, and smoked paprika. Place it in oven 175°C for 45 minutes to 1 hour, until the chicken is tender and fully cooked.
Remove the cooked chicken from the stock, and place on a chopping board. Let it cool slightly, then use two forks to shred the chicken into bite-sized pieces. Reserve some of the cooking stock in case you need to moisten the chicken later.
To make the hot and spicy sauce, melt the plant butter in a small saucepan over medium heat, Add the hot sauce, maple syrup, lime zest and juice, garlic powder, and stir well to combine. Gentle simmer, stirring occasionally, for about 3-5 minutes.
Place the shredded chicken in a large bowl. Pour the hot and spicy sauce over the chicken and toss until the chicken is evenly coated. If the mixture seems dry, add a splash of the reserved chicken.
Assemble the buns lightly toast the buns on a grill until they are warm and lightly toasted. Place a thin layer of vegan mayonnaise, lettuce leaf on the bottom half of each bun. Add a generous portion of the spicy shredded chicken on top of the lettuce. Top the chicken with sliced jalapenos tomato slices, and red onion slices.
