Coronation Chicken:

cooked chicken breasts, chopped into small chunks

Preparation
Heat the oil in a saucepan. Add the diced onion, and fry for 5 minute until soft. Add the curry powder and finely chopped red chilli, and cook for a further 2 minutes. Then add the tomato puree, chicken stock, mango chutney and simmer. Remove from the heat, add the coconut yogurt and lemon juice and zest to taste, leave to cool.
Then mix the coronation dressing with the diced chicken, and spring onion season with salt and pepper to taste. Slice the Schär Gluten Free & Vegan seeded diner rolls place sone leave in and fill with the coronation chicken mixture. Serve sprinkle with coriander and option extra dice red chilli.
