


Ingredients
Chickpeas:
800 g
canned chickpeas, rinsed and drained
2 tbsp
olive oil
1 tsp
chili powder
½ tsp
garlic powder
to taste
Salt and freshly ground black pepper
Salad
200 g
romaine lettuce, washed and chopped

red onion, thinly sliced
1
avocado, sliced
200 g
cherry tomatoes, halved
150 g
radishes, washed and sliced
200 g
sweetcorn, drained
1
red pepper, sliced
15 g
chives, chopped
Dressing:
50 ml
balsamic
100 ml
olive oil
to serve
Preparation
Place drained chickpeas in a roasting tray and add oil, chilli powder, garlic powder and salt and pepper and mix to coat evenly. Then roast for 7-8 minutes in the oven at 180oC, 375o F gas mark 5. Remove and reserve until needed.
Divide the roasted chickpeas and all the salad ingredients between the bowls and top chopped chives. Serve with balsamic and olive oil and Schär Gluten Free & Vegan White Dinner Roll.
