Preparation
Cut the mozzarella into sticks measuring around 8 cm by 1 cm and put in the freezer for around 30 minutes until completely hard. To prepare the English breading, beat the eggs in a bowl and season with salt and pepper. Pour the Schär Food Service Mix Flour and the Schär Breadcrumbs into two different containers.
Dip the mozzarella sticks into the flour, then into the beaten egg and finally into the breadcrumbs. For a stronger and crispier breading, repeat the process omitting the flour.
Fry in hot oil at 180 C° until golden. Drain on kitchen paper, sprinkle with salt and serve hot.
