Preparation
Beat the eggs with the sugar until frothy. Add the butter in a thin drizzle to prevent the mixture from collapsing. Sieve the Foodservice Mix and the cocoa to prevent the formation of lumps, and incorporate into the egg mixture by hand. Add the vanilla seeds.
Pour the mixture into a well-greased tin. Sprinkle the surface with the chocolate flakes. Bake at 180°C with the valve open for around 25 minutes, leaving the mixture slightly wet inside. Allow to cool, cut into squares and serve.

especially those that are naturally gluten-free or made from gluten-free ingredients (e.g. products from Schär Foodservice).

and always keep everything in specially designated, labeled and sealed containers.
