Ingredients

For the filling:

Preparation
Beat the eggs in a bowl, add the milk and mix well. Sieve the Foodservice Mix and add to the eggs and milk. Whisk until the batter is smooth, velvety and free of lumps.
Cover the bowl with cling film and refrigerate for 30 minutes, then stir well. Heat a 20-22cm non-stick pan, grease with a knob of butter and pour in a ladleful of batter, enough to cover the surface of the pan. Cook over a low-medium heat for around 1 minute on each side. Repeat until all the batter has been used. Stack the crepes on top of each other to keep them soft. Whip the cream with a little icing sugar until stiff. Fill each crepe with plenty of cream, berries and a few mint leaves. Dust with icing sugar before serving.
