Preparation
Put the Foodservice Mix and baking powder in the bowl of a stand mixer fitted with a spiral dough hook. Cream the butter by heating it for 10 seconds in the microwave, and add a little a time, then add the lukewarm milk. Process until the dough is soft and homogeneous.
Roll out to a thickness of 2 cm between two sheets of greased greaseproof paper. Cut the dough into rounds using a 5 cm dough cutter. Place on a baking sheet lined with greaseproof paper, and brush the tops with the beaten egg. Bake for 12 – 15 minutes at 180°C with the valve closed. In the meantime, whip the cream with the icing sugar until stiff.
When the scones are baked, allow to cool, cut horizontally with a serrated knife and brush with melted butter. Spread the bottoms of the scones with the jam, decorate with the whipped cream and top with the scone tops, pressing down slightly.
