Preparation
Pour the Foodservice Mix into a large bowl. Add the lukewarm water, olive oil and salt. Quickly bring the dough together with your hands, then transfer the dough to a wooden board.
Continue kneading the dough until it is smooth and compact. Form into a ball, wrap in cling film, and leave to rest for 30 minutes.
Divide the dough into 4 pieces of equal size, form each one into a ball and leave to rest for a few minutes, then flatten each ball with the fingertips. Using a rolling pin, roll out to a diameter of 22cm and a thickness of 1mm. Cook for 3 minutes on each side on a preheated non-stick pan. Stack the cooked tortillas on top of each other and cover with a cloth to prevent them from drying out.
Cut the chillies into rounds and julienne the red peppers. In a non-stick pan, fry the ground meat for around 2 minutes, season with salt and pepper and add the chillies, peppers, cooked black beans and sriracha. Cook for a further 2 minutes. When cooked, place a generous amount of filling at the centre of each tortilla, fold over and warm through for a few minutes on each side. Serve immediately.
